Molino Orsili
Everything starts with the biga: local soft wheat flour — milled by Molino Orsili — mixed with cold water in small proportions.
The biga rests at low temperature for at least 24 hours. The cold slows everything down: aromas develop slowly, the gluten structure becomes stronger and more elastic.

The biga is combined with fresh flour and water. After a second rest, the dough is divided into precise balls that continue to rest until it's time to stretch them.
Each ball is hand-stretched on the counter, no rolling pin. Tomato, mozzarella and other ingredients are spread by hand. Every pizza is made to order, one at a time.
A few minutes at high temperature and the pizza is ready. It comes out fragrant and crispy — to eat on the spot or to receive directly at home.
